You can’t be called Fish and not know your way around a glass, coldie, cocktail or wine list. Bob did. He also had a truffle-hound’s nose for a not merely decent bottle but an exceptional one. When Raul Gardini launched the first of his five Il Moro di Venezias for the 1992 America’s Cup it was with a Franco Zeffirelli- directed extravaganza. Gardini hired every gondola in Venice, invited high society to a beautifully choreographed event of filmic qualities. Journalists from the USA flew over on Concorde, we UK journalists stayed in the fabled Hotel Danieli. The day before the launch started with bellinis on an open tab at Harry’s Bar with dinner at the hotel. Handed the wine list, Fish read from the back first. Asked what he’d selected, ‘The most expensive!’ was the immediate reply.
